Chilled Garlic Mushroom Pasta Sauce
1 cup chopped onion
1⁄2 cup olive oil
3 T. butter
2 lbs. fresh sliced mushrooms
28 oz. undrained crushed tomatoes
1 t. salt
1⁄4 t. pepper
1⁄2 cup red wine vinegar
1 bunch finely chopped fresh parsley (about 11⁄2 cups)
3 minced garlic cloves
Saute onion in olive oil and butter. Add sliced mushrooms and cook 2 minutes. Add tomatoes, salt and pepper; cover and simmer for 20-30 minutes. Add red wine vinegar, parsley and garlic; mix well. Cover and simmer for an additional 10 minutes. Chill overnight. Serve cold over pasta. Optional: use as a dip topping for French bread.

Stromboli
1 loaf frozen bread dough, thawed
4 T. vegetable oil
4 T. Parmesan cheese
2 eggs
1⁄4 t. fresh grated garlic
1 t. oregano
1⁄8 t. garlic salt
1 pkg. shaved meat
1⁄2 pkg. pepperoni
1⁄2 cup Mozzarella cheese
Press dough into a greased 12-by-15-inch cookie sheet. Combine, oil, Parmesan cheese, eggs, garlic, oregano, and garlic salt. Pour over dough. Layer meat, pepperoni and cheese on top. Fold over bread and pinch edges to seal, putting sealed edge down. Bake at 350 F for 20 minutes. Serves 6 to 8.

Shrimp Dejonghe
1 cup butter, melted
3 cloves garlic, minced
1⁄2 cup parsley
1⁄2 t. paprika
2⁄3 cup cooking sherry
2 cups bread crumbs
5 to 6 cups cleaned cooked shrimp
Mix melted butter, garlic, parsley, paprika and sherry. Add bread crumbs and toss. Place shrimp in 11-by-7-inch baking dish. Spoon butter mixture over shrimp. Bake at 325 F for 20-25 minutes or until crumbs brown.

Hummus Dip
2 cans (151⁄2 oz. each) black
beans, drained and rinsed
1⁄2 cup olive oil
2 cloves garlic, cut in half
4 T. lemon juice
1⁄2 t. lemon pepper
1⁄2 t. cumin
Process all together in food processor until smooth. Serve with any kind of chip, cracker or fresh veggies. This is a great low-cholesterol, sugar-free snack.

Garlic Spread Lombardi Style
2 whole garlic bulbs 11⁄2 cups extra virgin oil
Leaving the garlic bulbs whole, cut only the bottom off. Place in a baking dish. Add olive oil. Bake at 250 F for 1 hour. Remove bulbs from oil. Can be pureed. Save oil for cooking.
