No so sushi
plate.jpgBut mock Japanese lunch will leave you smiling

If you haven’t quite learned to enjoy the real deal when it comes to the Japanese dish of sushi, you can still break out the chopsticks and have your own version of a sushi experience with these easy-to-make Mock Sushi Rolls which are a perfect cold summer lunch. Mom and Dad will love them, too, so you might want to double or triple the recipe.

To make, you’ll need:
• 1 whole wheat wrap or soft flour tortilla
• Whipped or softened cream cheese
• Shredded lettuce, carrots and/or other veggies
• 2 slices of thin sliced cold cuts of your choice (like  ham, turkey, salami or chicken)
• Butter knife
• Cutting board
• Chopsticks (optional)

What to do:
Place wrap or tortilla on the cutting board. Spread cream cheese on the wrap/tortilla with the butter knife. Add veggies if desired, then the meat. Roll the wrap/tortilla up into a tight roll. Give the roll a little squeeze to make sure its rolled tight enough. Cut the roll into 8-10 pieces. Place on a plate and use chopsticks to eat your “sushi.”
